I add some milk for extra fluffiness and vitamins, I add lots of cheese for extra flavor and protein(grated cheddar and parmesean) and I scramble them up until they are firm to avaoid texture issues. This egg recipe is the #1 source of protein in my son's current diet (he is 21 months).

I just got my 7 yr old to start eating egg whites instead of the whole egg this past year.I use a little butter with some salt & pepper and "fry them up over hard". I could never get him to eat the whole egg. I had to cut back on my cholesterol so every one is eating egg whites in my household and he likes it with out the yolk-Go figure:P

We use a couple of ways with our children: they like to eat either cooked oats porridge or cereal. For the oats we mix in a yolk with their oats once it is not so hot. For the cereal we make the milk custardy by adding egg yolk to their milk.

There are days they don't like eggs at all and days they do. Or they'll be picky - one only likes the yolk and the other only likes the white! Or they'll be split between scrambled and pickled eggs. The hardest is to get them to eat whole plain boiled eggs. On days when they are really being picky we have a tub of egg protein powder, so then they get applesauce with protein powder instead (to make sure their blood sugars are stabilized with protein).
